Fetchmail and Postfix along with bogofilter, and perhaps even spamassassin are
good options. You also may wish to look at converting the windows boxen over
to Xandros linux deluxe that runs Windows apps. They recently offered flalug
a 45% discount fo the deluxe edition. Check out archives for the email
